Bibingka – Filipino Coconut Cake

INGREDIENTS

  • 1/2 cup butter melted
  • 1 tbsp vanilla
  • 8 oz cream cheese
  • 2 cups granulated sugar
  • 3 eggs
  • 3 1/2 cups sweet rice flour (1 lb.)
  • 8 oz can crushed pineapple
  • 1 tbsp baking powder
  • 15 oz can cream of coconut
  • 1 cup milk

TOPPING

  • 2 tbsp granulated sugar
  • 1/4 cup brown sugar


INSTRUCTIONS

  1. Preheat the oven to 350F degrees. 
  2. In a large bowl, cream together the cream cheese and sugar.
  3. Stir in the eggs, one at a time.
  4. Mix in the remaining ingredients and stir, until smooth.
  5. Pour into a greased 13x9 pan. 
  6. Sprinkle with brown sugar and 2 tablespoons granulated sugar.
  7. Bake in a 350-degree oven for 1 hour. 
  8. Allow to cool. 
  9. Cut into squares and serve.
